How to rank players of different skill, with no set schedule?

I wondered if we did this one year with one of the 2v2 leagues?

Essentially I'm looking at tracking scores for recreational games with no set schedule (perhaps only a cap on the number of times two players can play each other), but being able to rank them based on some sort of skill-adjusted score.

Obviously you could simply rank averages (Goal Diff or Winning %), but I'd like to factor in the strength of each player.

I've scoured the net, and looked at things like college football ranking systems and World Cup soccer - but can't figure how to create the spreadsheet to do this. RPI? ELO?

Help!?!
